Salt as you go. Add a little during cooking, then taste and adjust at the end. It’s easier to build flavor than fix it later.
Blend if you want it creamy. Use an immersion blender right in the pot, or carefully transfer to a blender. Stir in a splash of cream, milk, or coconut milk if you like it extra rich.
