the short version….

Welcome to my blog! I’m Kim and I love to spend time with my family, eat, cook, read, and run. I enjoy learning about food and creating healthy recipes for my family. I started this blog for several reasons. Because I didn’t always believe it myself; I want to teach others that nutritious eating will not only have you feeling great, but can also be VERY yummy. Hopefully this blog will inspire others to make smart choices when it comes to feeding their bodies. Last, but definitely not least, I would like to share the tools, like information on healthy foods and delicious wholesome recipes that will make it easy for you to feed your family the right way.  Stick around and follow me on my journey to stay healthy for the long run.

the long version….

Here is the fam. We all LOVE to eat, but some of us are a little pickier than others. 😉 I really try to feed my family with real, clean and healthy foods as much as possible. I think it is important to be informed about what we put in our bodies and share this information with our kids at an early age. All of my kids have a pretty good idea of what is healthy and what is not. Now whether they want to follow this all of the time is a different story. I do believe in the 80/20 food philosophy. Eat right 80% of the time with 20% for splurging a bit. I try to stick to this by only buying food for the home that is on the 80% spectrum. When my kids are with friends, extended family or when we are eating out then we can dip into the 20% spectrum. And, of course, every now and then we enjoy special treats at home. I’m not neurotic about our eating, just informed and conscientious.

I haven’t always been a healthy eater. I used all of my three pregnancies as an excuse to eat everything in site and consequently gained way too much weight. I would then get healthy for awhile in an attempt to lose all of the weight. All through my twenties I yo-yoed between dieting and exercising to falling off the bandwagon and gaining weight. Finally, at the age of 29 it kind of hit me, “I’m about to be 30 years old and it’s time to get in shape and stay in shape”. Around this time I was also really getting into cooking and that helped because I was eating at home more and was able to control exactly what I put into my body.

I also became really involved in fitness. I started with group aerobic classes, like turbo kick and then added running to my fitness regimen. I started out only being able to run for 10 minutes at a time, but as I continued to increase the amount of time and the speed I was able to run at; I really started to enjoy it. My new year’s resolution that year was to run a marathon and in February I ran the Cowtown half-marathon in Fort Worth. I did pretty good and that summer I signed up for the White Rock Marathon in Dallas to be held in December. To make an already long story a little shorter- I’ll just say that while training and increasing my mileage up to 15 miles, I began to experience pretty intense knee pain. I visited an orthepedic specialist and then was referred to a physical therapist, but at this point it was too late to be ready to run the marathon in December. However, I was on the right track and with personalized orthotics for my shoes I was able to get back into running and steadily increase my mileage. So, I decided to try once more and signed up again for the White Rock Marathon to be held December 2011.

The training that went into preparing for the marathon and the actual marathon was one of the hardest things I have ever done, but so worth it in the end. In exercise and in life, when something is really tough, I can think- “Okay, I ran 26.2 miles…. I can do this“.

I started training for my second full marathon on August 19, 2013 to be prepared to run the Dallas Marathon on December 8th, 2013. Unfortunately, due to icy conditions in Texas at that time, the Dallas Marathon was canceled. This was extremely disappointing, however, I sure didn’t want to be running on ice and in the freezing conditions. Luckily, through Facebook, I saw that a local running store (Fort Worth Running Company) was going to be putting on a small scale marathon for the very next weekend. I was SO in!


It was one tough race…. cold, muddy and VERY windy; but I’m so grateful that I was able to complete my goal for 2013. If you’re interested, I posted my training plan here.


At present time, my fitness focus is strength training and building muscle. I’m a huge proponent of women and weightlifting. Since shifting my focus from running to lifting, I’ve noticed such a positive change in my body. I still enjoy running, I just mix it up with lifting too. In August of 2016 to present time, I participate in Intermittent Fasting bootcamps (new bootcamp starts 1/9/17), hosted by Amanda Tress. I’ve had AWESOME results!
