Chocolate Baked Oatmeal in a Mug- the perfect breakfast for those of you who like a warm, hearty, scrumptious morning meal that can be made in a flash with very little mess!
Yes, healthy enough to be breakfast, but totally decadent enough to be dessert. While oatmeal is not usually the first thing that people think of when they think chocolate dessert, don’t knock it till you try it. One of my favorite things, to satisfy the after dinner sweet tooth, is to enjoy a few bites of sweet, creamy oatmeal. The reason you’ll always find some variety of baked oatmeal in my fridge.
The perfect substitute when you want dessert, but you’re also planning an upcoming beach vacation. 🙂 To give my microwavable baked oatmeal a rich, chocolatey flavor, I used Silk Nutchello Dark Chocolate and Walnuts Nut-Based Beverage instead of regular almond milk. So incredibly delicious, I tell ya! Whether you use Nutchello as a substitute for other milks in recipe creation or you just enjoy a tall glass to take you to your 3PM happy place, this new nut-based beverage is a dessert lover’s dream.
Smooth and enticing, Nutchello is lower in sugar and calories than your average flavored drink and is offered in three tempting flavor varieties- Rich Dark Chocolate and Walnuts, Caramel Almonds and Cashews and Toasted Coconut and Cashews. The Rich Dark Chocolate and Walnuts poured over a glass of ice has been a wonderful pick-me-up early in the evening when I’m feeling sleepy and snacky.
Speaking of snacky, this Chocolate Baked Oatmeal in a Mug is made lickety-split right in your microwave- so convenient when the snack attack hits. I know you guys are going to love this oatmeal recipe! It’s:
Brownie batter flavored
Truly a must try- so what are you waiting for????!!!!!
- ½ cup old-fashioned rolled oats*
- 1 tablespoon ground flax seed
- 1 egg
- ½ cup Silk Nutchello Dark Chocolate + Walnuts
- 1/2 of a medium banana mashed
- 1 Stevia packet for extra sweetness optional
- Optional for serving: fresh fruit yogurt, nut butter, maple syrup, chopped nuts and/or an extra splash of Nutchello or almond milk
- Spray a medium to large microwave-safe mug with cooking spray and inside combine all ingredients.
- Microwave on high for 3 minutes.
- Stir in and top with optional ingredients. I enjoyed my oatmeal with a Stevia packet, a splash of almond milk and fresh pomegranate seeds.
*Use certified gluten-free oats as needed. Quick cooking oats work too, if that's what you have on-hand.
