Breakfast is my favorite meal of the day and I love getting things started with a tasty, nutritious, protein-packed meal. Thanks to some awesome plant-based chocolate protein powder (Plnt Protein), I received from Vitamin Shoppe, I was able to create these delicious Chocolate Protein Crepes for breakfast, that kept me fueled right up until lunch.

Chocolate Protein Crepes filled with Greek yogurt and fruit is a delicious protein-packed breakfast that will fuel you right up until lunch!
Ingredients
  • For the crepes:
  • 1 cup liquid egg whites about 8 egg whites
  • 1 scoop whey protein powder chocolate flavor (about 30 grams)
  • For the filling:
  • 1 cup reduced fat plain Greek yogurt*
  • 1/2 teaspoon pure vanilla extract
  • Stevia to taste; optional
  • 1 cup sliced strawberries
  • 1 cup fresh blueberries Or more strawberries, if that's what you have on-hand, like me.
Instructions
  1. Combine egg whites and protein powder in a medium bowl; mix well.
  2. Heat a small nonstick skillet (or omelet pan), lightly coated with spray, on medium-high heat.
  3. Spoon about 1/4 cup batter into skillet; cook for 1 to 2 minutes, or until bubbles form on top. Flip with spatula and cook for 30 seconds more.
  4. Repeat with remaining batter to make four crepes. Set aside.
  5. Combine yogurt, vanilla and Stevia (if desired) in a small bowl; mix well.
  6. Fill crepes evenly with yogurt mixture, strawberries and blueberries.
Recipe Notes

*I also enjoy using Chobani Simply 100 flavored yogurts and if using, omit the vanilla and Stevia.
