Israeli Salad With Red Bell Vinaigrette
This Israeli Salad With Red Bell Vinaigrette is so pretty, colorful, refreshing and zesty. Essentially summer in a bowl!
The classic Israeli Salad always includes cucumbers and tomatoes as the base, other additions can be finely chopped red peppers, radish, onion, herbs including parsley, mint and green onion and even root vegetables such as carrot can be added. The dressing is usually a simple drizzle of lemon, olive oil and salt. You can definitely keep things simple, but why not give this Middle Eastern salad a little extra pizzazz?
I did some experimenting with my Israeli Salad and tossed it with Victoria’s Garden Grown Red Bell Vinaigrette. Oh my! So tasty! Don’t stop with the salad, though. Victoria’s Garden Grown sent me the 6 available flavor varieties and I’ve been enjoying them on everything from raw veggies to wraps and sandwiches. They also work great as a recipe mix-in, like in this salad.
Victoria’s Garden Grown is a vegetable based organic salad dressing that is GMO free, vegan, gluten free and absolutely delicious. Perfect for those of us with dietary restrictions and those of us that are health conscious and truly care about what we’re putting in our bodies.
Feel free to make your Israeli Salad your own. This salad is great if you have leftover veggies from other recipes that are just itching to spoil if they don’t get used. I really love the combo of mint and cilantro, but feel free to sub one or both of those herbs out for parsley. And, as you can see from the picture below, this salad works as a Mediterranean-type salsa too.
Whether you’re searching for a recipe to utilize the spoils of an overabundant garden or you’re simply craving a refreshing summer side dish, this salad should fit the bill nicely either way.
This Israeli Salad is everything! It’s:
Simply a MUST!
This Israeli Salad makes a great side dish, but I love a big bowlful of it at lunch or for a light dinner. It also works wonderfully to add it to a bed of spinach along with some grilled chicken. Or even throw it into the cooler for your next BBQ, picnic, or summer beach day!

- 1 English cucumber
- ½ medium red onion
- 1 red bell pepper
- 1 yellow or orange bell pepper
- 1/4 cup finely chopped mint
- 1/4 cup finely chopped cilantro
- Zest of one lemon
- Lemon juice start with ½ a lemon, then add more to taste
