Gut-Healing Easy Slow Cooker White Chicken Chili
Gut-Healing Easy Slow Cooker White Chicken Chili is a gluten-free, hearty and healthy crock pot recipe. You’d never guess it’s low-fat, too!
This post is sponsored by Vital Proteins. All opinions expressed, as always, are my own.
Chicken breast, white beans, canned green chiles, chopped shallot, garlic, seasonings, and your favorite toppings combine to create a satisfying chili recipe that’s high in protein and fiber, low in fat, and gluten and dairy free. I also included a couple scoops of Vital Proteins Beef Gelatin to promote digestive health. Don’t worry if you don’t have this on hand; it’s totally optional.
VITAL PROTEINS BEEF GELATIN
Vital Proteins brand gelatin contains only one unflavored ingredient – collagen protein. Vital Proteins collagen protein is a pasture-raised, grass-fed bovine hide gelatin powder. It offers comprehensive benefits for health, fitness, and beauty.
The gelatin can be mixed into both hot and cold liquids, but will gel if blended in cold or extremely hot. It is gluten free, Non-GMO, sugar free, paleo friendly and Whole30® Approved. Uses:
- For a hot drink, mix 1-2 scoops collagen protein into 4 oz. cold liquid, let sit for one minute then add 4 oz. of hot liquid to dissolve. Fruit juice, broth, or herbal tea are great suggestions.
- For adding to food, gelatin can be utilized in a variety of your favorite foods such as fruit gelatin, custards, soups, stews, smoothies and ice cream.
GUT-HEALING EASY SLOW COOKER WHITE CHICKEN CHILI
Gut-Healing Easy Slow Cooker White Chicken Chili is going to be a hit with your family and leftovers just get better and better (hello easy weekday lunches!) This particular recipe makes a smaller batch, feeding about 3 people, so for plenty of leftovers I would suggest doubling the recipe. Actually, there’s lots of chicken, so you may just want to add another can of beans and another can of chicken broth. As an added plus, the ingredients can be assembled in the crock the night before (here’s the crock pot I have >) then popped onto the base and slow cooked whenever you’re ready. Delicious, easy, and healthy – what are you waiting for?!

Gut-Healing Easy Slow Cooker White Chicken Chili is a gluten-free, hearty and healthy crock pot recipe. You’d never guess it’s low-fat, too!
- 1 lb raw chicken breasts or tenders
- 1 15 oz can great northern beans, drained and rinsed
- 1 4 oz can chopped green chiles
- 1 shallot or 1/2 onion, chopped
- 2 cloves garlic, minced
- 1-1/2 teaspoons cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1-2 scoops Vital Proteins Beef Gelatin (optional)
- 2 cups chicken broth
- juice of 1/2 small lime
- 1/4 cup milk unsweetened almond or cow's milk
- 1 tablespoon white flour (use gluten-free as needed)
- Optional toppings: sliced avocado, lime wedges, tortilla chips, shredded cheese, chopped cilantro
-
Combine all ingredients except flour and milk into a 6-quart slow cooker; stir to combine. Cover and cook on low for 4 hours.
-
Remove chicken; shred and place in the refrigerator.
-
Whisk together flour and milk in a small bowl; pour into chili and stir to combine.
-
Cover; cook on high for 30 minutes, stir shredded chicken back into chili, and serve with toppings. Taste before adding any more salt & pepper.
*This is a small batch, making just over 4 cups. Feel free to double the recipe if serving more than about 3 people.
**This recipe can also be made on the stovetop. Cook shallot until tender and then add in other ingredients. Use cooked, shredded chicken. Rotisserie chicken works well. Mix milk and flour and add that too. Simmer everything together over low heat for about 5 minutes. Remove from heat and serve.
