Chicken breast, white beans, canned green chiles, chopped shallot, garlic, seasonings, and your favorite toppings combine to create a satisfying chili recipe that’s high in protein and fiber, low in fat, and gluten and dairy free. VITAL PROTEINS BEEF GELATIN

GUT-HEALING EASY SLOW COOKER WHITE CHICKEN CHILI

Gut-Healing Easy Slow Cooker White Chicken Chili is going to be a hit with your family and leftovers just get better and better (hello easy weekday lunches!) This particular recipe makes a smaller batch, feeding about 3 people, so for plenty of leftovers I would suggest doubling the recipe. Actually, there’s lots of chicken, so you may just want to add another can of beans and another can of chicken broth. As an added plus, the ingredients can be assembled in the crock the night before (here’s the crock pot I have >) then popped onto the base and slow cooked whenever you’re ready. Gut-Healing Easy Slow Cooker White Chicken Chili

Gut-Healing Easy Slow Cooker White Chicken Chili is a gluten-free, hearty and healthy crock pot recipe. You’d never guess it’s low-fat, too!

Ingredients

  • 1 lb raw chicken breasts or tenders
  • 1 15 oz can great northern beans, drained and rinsed
  • 1 4 oz can chopped green chiles
  • 1 shallot or 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1-1/2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried oregano
  • 1-2 scoops Vital Proteins Beef Gelatin (optional)
  • 2 cups chicken broth
  • juice of 1/2 small lime
  • 1/4 cup milk unsweetened almond or cow's milk
  • 1 tablespoon white flour (use gluten-free as needed)
  • Optional toppings: sliced avocado, lime wedges, tortilla chips, shredded cheese, chopped cilantro

Instructions 

  • Combine all ingredients except flour and milk into a 6-quart slow cooker; stir to combine. Cover and cook on low for 4 hours. 
  • Remove chicken; shred and place in the refrigerator. 
  • Whisk together flour and milk in a small bowl; pour into chili and stir to combine. 
  • Cover; cook on high for 30 minutes, stir shredded chicken back into chili, and serve with toppings. Taste before adding any more salt & pepper. 

Notes

*This is a small batch, making just over 4 cups. Feel free to double the recipe if serving more than about 3 people.
**This recipe can also be made on the stovetop. Cook shallot until tender and then add in other ingredients. Use cooked, shredded chicken. Rotisserie chicken works well. Mix milk and flour and add that too. Simmer everything together over low heat for about 5 minutes. Remove from heat and serve.
