Southwestern Kale Salad with Creamy Avocado Dressing
Southwestern Kale Salad with Creamy Avocado Dressing – healthy, crunchy and loaded with delicious flavor. Totally, an avocado-lovers DREAM!
This 10-minute salad starts with a bed of baby kale (feel free to use your favorite leafy greens) and is topped with super foods like red bell pepper, kidney beans and avocado. Corn adds brightness and a subtle sweetness, and a creamy avocado dressing ties it all together. I used a kale mix, so that’s why you see some shredded cabbage and carrots in the pictures.
This kale salad pairs perfectly with so many southwestern-inspired dishes. And goes especially well with chicken enchiladas verdes from Good Food Made Simple.

I’m seriously smitten with this meal. It’s:
Loaded with super foods, protein + fiber
This would make the perfect weeknight meal when you’re craving something quick and healthy. And if you’re enjoying the salad on its own, try adding chopped chicken or shrimp to this salad for some added protein and a super filling meal. I personally love this chili lime shrimp recipe and this paleo chicken and think they would both go really well over the top of this salad. I mean how can you go wrong with these southwestern flavors?! And feel free to add a scoop of your favorite salsa for even more flavor!
- 1 10 oz. bag chopped kale lettuce
- 1/2 red bell pepper diced*

- 1 cup canned corn drained and rinsed
- ½ avocado chopped

- ¼ cup cilantro leaves
- ¼ cup plain Greek yogurt**
- 3 tablespoons lime juice
- 1/8 teaspoon cayenne pepper optional
- Salt and pepper to taste

- ¼ to ½ cup water depending on consistency
- To make the salad, toss the kale, pepper, black beans, corn, avocado and onions together in a large bowl.
- To make the dressing, combine the avocado, garlic, cilantro, yogurt, lime juice, cayenne pepper and salt/pepper in a food processor and pulse until combined. With the motor running, slowly add the olive oil and water until smooth. Add water, as needed, for desired consistency.
