- 1 1/2 cup rolled oats or 1 1/4 cup quick oats gluten-free as needed
- 1/4 cup cornstarch
- 1 tablespoon coconut palm sugar granulated sugar will also work
- 1 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 5.3 oz. container So Delicious strawberry, vanilla or plain yogurt (about 1/2 cup)
- 1/4 cup So Delicious unsweetened vanilla almond milk or other nondairy milk
- 2 large eggs
- 1 tablespoon melted coconut or olive oil
- 1 teaspoon vanilla extract
- 1/2 cup halved strawberries*
- Optional for topping: chocolate chips fresh fruit, pancake syrup, nut butter, and/or So Delicious coconut coco whip
Preheat waffle iron.
Add all the ingredients to a blender and process on high until smooth.
Spray waffle iron with cooking spray and pour about 1/2 cup batter per waffle, and depending on size of waffle iron, into waffle iron. Batter will be thick, so smooth out slightly with the back of a spoon. Cook until waffles are crisp and golden brown, repeat with remaining batter.
Serve waffles warm with your favorite toppings. Waffles can also be stored in the freezer for a quick breakfast option. Just reheat them in the toaster when you're ready to eat.
*If you don't have strawberries on-hand, this recipe will work without them, you may just need to increase the milk by about 2 tablespoons.
