This caesar dressing chicken is one of those dinners I make when I know everyone at the table will be happy. The kids love the crunchy, buttery topping, and I love how hands-off it is once it’s in the oven. It tastes like your favorite Caesar salad turned into a cozy, oven-baked meal.

I usually serve this dish with a simple salad, roasted broccoli, mashed potatoes or roasted baby potatoes, but it’s flexible enough to work with whatever we have on hand. It’s become one of those reliable recipes I keep coming back to, easy to throw together, made with ingredients I already have, and always a hit with my family!

  • Chicken: Thin-cut breasts cook quickly and evenly. If yours are thicker or uneven, pounding them to an even thickness helps prevent dry edges and undercooked centers.
  • Caesar dressing: Use your favorite store-bought brand or homemade for the best flavor. A thicker, creamy Caesar works best so it clings to the chicken and keeps it juicy while baking.
  • Shredded mozzarella or Provolone cheese: Both melt beautifully and add that stretchy, gooey layer. Mozzarella is mild and creamy, while Provolone adds a slightly sharper bite.
  • Croutons: These create the crunchy topping that takes this dish to the next level. Store-bought croutons work perfectly, or use homemade if you have the time.
  • Melted butter: Helps the croutons get nice and toasty with buttery flavor.
  • Parmesan cheese: Powdered parmesan cheese actually works great to mix with the melted butter and crushed croutons. You can use grated parmesan as well.

How to Make Caesar Dressing Chicken

Step 1: Prep chicken. Preheat the oven to 375°F and grease an 8×11½-inch or 9×13-inch baking dish. If needed, pound the skinless chicken breasts to an even ¾–1-inch thickness. Season with salt and pepper.

Step 2: Add dressing. Place chicken in the casserole dish. Pour ½ of the caesar dressing on one side of the chicken, flip and repeat on the other side.

Step 3: Add cheese. Sprinkle shredded mozzarella across the top of the chicken.

Step 4: Stir crushed crouton mixture. In a medium bowl, mix the crushed croutons, melted butter and parmesan cheese.

Step 5: Bake. Spread crouton mixture across the top of the chicken. Then, bake on the center rack at 375°F for 20-30 minutes, until the chicken is cooked through and the topping is golden brown.

Step 6: Cool and serve. Remove from the oven, loosely tent with foil, and let rest for 5-10 minutes before serving. Garnish with fresh parsley, if desired.

  • Pound the chicken evenly: This helps the chicken cook at the same rate so you don’t end up with dry edges or undercooked centers.
  • Season lightly: Caesar dressing and cheese already add plenty of flavor, so a simple pinch of salt and pepper is all you need.
  • Use thick Caesar dressing: A creamier, thicker dressing clings better to the chicken and keeps it juicy while baking.
  • Don’t skip the cheese layer: The mozzarella (or provolone) acts as a barrier, locking in moisture and helping the crouton topping stick.
  • Crush croutons finely: Smaller pieces create a more even, golden topping and prevent large chunks from burning.
  • Watch the topping near the end: If the crumbs start browning too fast, loosely tent the dish with foil to keep them from over-toasting.

Can I use a different cut of chicken?

Yes! Boneless, skinless chicken thighs work well and stay extra juicy. You can also use thicker chicken breasts, just pound them to an even thickness so they cook evenly. Keep in mind that they will likely need a little longer cook time.

How do I know when the chicken is fully cooked?

The chicken is done when an instant-read thermometer inserted into the thickest part of a center breast reads 165°F. The juices should also run clear.

Can I make this recipe gluten-free?

Yes! Use gluten-free croutons or breadcrumbs and double-check that your Caesar dressing is gluten-free.

Storage Instructions

  • Refrigerator: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat in the oven at 350°F until warmed through to help keep the topping crispy. An air fryer also works well. The microwave can be used, but the topping will soften.
  • Freezing: Storing in the freezer isn’t recommended, as the creamy dressing and crunchy topping don’t hold up well once they thaw.
  • Make-ahead tip: You can assemble the chicken (without the crouton topping) up to 24 hours in advance. Cover and refrigerate, then add the topping right before baking for best results.

  • 4 boneless, skinless, thin chicken breasts
  • 1 cup Caesar dressing of choice, click for homemade recipe
  • 1 ½ cup shredded mozzarella, or Provolone cheese
  • 2 cups crushed croutons
  • 4 tablespoons melted butter
  • ¼ cup grated parmesan cheese
  • Salt and pepper, to taste
  • Chopped fresh parsley, optional to garnish

Instructions 

  • Preheat oven to 375ºF and spray the inside of an 8×11½-inch or 9×13-inch baking dish with nonstick spray. If the breasts are uneven thickness, pound them (placed in a Ziplock bag and on a flat surface) to an even ¾-1-inch thickness using a meat pounder.
  • Season chicken with salt and pepper and place in the casserole dish. Pour ½ of the 1 cup Caesar dressing of choice on one side of the chicken, flip and repeat on the other side.
  • Sprinkle 1 ½ cup shredded mozzarella across the top of the chicken.
  • In a medium bowl, mix the 2 cups crushed croutons, 4 tablespoons melted butter and ¼ cup grated parmesan cheese.
  • Spread crouton mixture across the top of the chicken. Then, bake on the center rack at 375°F for 20–30 minutes, until the chicken is cooked through and the topping is golden. If the crumbs start to brown too quickly, loosely tent the dish with foil for the remaining bake time.
  • The chicken is done when an instant-read thermometer inserted into the thickest part of a center breast reads 165°F. Remove from the oven, loosely tent with foil, and let rest for 5–10 minutes before serving. Garnish with chopped parsley, if desired.
