Ready in a flash, at 20 minutes or less, this Seared Salmon with Watermelon Tomato Avocado Salsa is full of incredible texture and is bursting with fresh summertime flavors! Serve over a bed of greens for an easy-to-make meal, perfect for busy weeknights, but elegant enough to serve guests.

Seafood has become a staple in our household and I’m especially smitten with salmon – make that Alaska salmon. Not only is Alaska salmon so delicious and quick to cook up, but it’s also loaded with nutritional benefits, including an abundance of omega-3 essential fatty acids, quality protein and fat soluble vitamins A and D and trace minerals including iodine, selenium, zinc and magnesium.
Whether I’m at my local grocery store or eating out, I’m sure to ask for Alaska salmon. With Alaska salmon, I know that it will be wild-caught, natural, sustainable and of the highest quality. Wild-caught Alaska salmon includes five species that can be found at the seafood counter or freezer case including king, sockeye, coho, keta and pink.
I hope you guys give this Seared Salmon with Watermelon Tomato Avocado Salsa at try. It makes the perfect weeknight dinner, since you can prep the salmon in mere minutes and cook it in just a couple more. - 1 large avocado peeled, seeded and diced
- 1 1/2 cups tomatoes diced
- 1 1/2 cups watermelon diced
- 1/4 red onion diced
- 1 small jalapeno seeded and diced
- 1/4 cup fresh cilantro chopped
- 1 tablespoon avocado or olive oil
- 4 6-oz. wild Alaska salmon fillets about 1 in. thick
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Combine all ingredients in a medium to large serving bowl.
Preheat oven to 500 degrees F. Line a rimmed baking sheet with foil.
Heat 1 tablespoon oil in a large skillet over high heat. Sprinkle salmon with salt and pepper.
Add fillets to pan (flesh side down) and cook for 4 mins (on one side).
Transfer fillets to baking sheet seared side up and bake at 500 degrees F. for 4 mins or until desired level of doneness.
Plate cooked fish on a bed of greens and top with Watermelon Tomato Avocado Salsa. Enjoy!
