These easy avocado mango bites are a tasty, crowd-pleasing app that can be made in a flash!
These fabulous little bites are perfect for any summer party or just a great snack to enjoy poolside. The combo of sweet mango with creamy avocado, spiciness of the salsa and that classic TRISCUIT crunch – is a major explosion of flavor, I tell ya.
This app is a version of the Avomangsalscuit recipe from TRISCUIT Crackers, made with just wheat, oil and salt. Load them up with fresh slices of avocado and mango, and a dollop of black bean and corn salsa. And for a little extra pizzazz top it off with chopped cilantro and crumbly cheese. Last, try not to eat too many!! Seriously, guys, these bites are addicting. It’s like a party in your mouth.
Whether it’s with toppings, a slice, a dollop, a sprinkle – it’s all about the TRISCUIT Crackers. Such a fabulous texture and crunch! I also love that they are made with 100 percent whole grain, are low in saturated fat and are a good source of dietary fiber. I used the original flavor variety for this recipe, but so many other flavors would be delicious too. Next up, I’ll be using the cracked pepper & olive oil… yummers!

- 12 TRISCUIT Crackers
- 1/2 avocado , cut lengthwise into 12 slices, then cut crosswise in half
- 6 fresh mango slices , cut in half
- 2 tablespoons black bean and corn salsa
- 1 tablespoon chopped fresh cilantro optional
- 1 tablespoon crumbled feta or goat cheese optional
- Top crackers with avocados.
- Add mangos.
- Spoon salsa over mangos.
If desired, top with chopped cilantro and crumbled cheese. Enjoy!
