Roasted Red Pepper Vinaigrette
Zesty and flavorful, this Roasted Red Pepper Vinaigrette will perk up any salad… and any salad lover! I’m a huge fan of salads, but only if I have a yummy dressing to drizzle over the top. This Roasted Red Pepper Vinaigrette does not disappoint- you’ll want to put this stuff on everything.
I recently came across this recipe for Roasted Red Pepper Vinaigrette while browsing Weight Watchers Magazine on Texture and knew it must be recreated. I was pretty sure it would be wonderful on a Tex-Mex type salad and you know how I feel about Tex-Mex. Turns out I this dressing is so delicious I could pretty much put it on anything.
Even though I love creating my own recipes, it’s also nice to get inspiration from other sources. There are a myriad of places to get recipe inspiration, but my go-to place to get meal ideas is through magazines. There is just something so fun about all of those colorful pictures. Roasted Red Pepper Vinaigrette
- 1 cup chopped jarred roasted red peppers, rinsed and drained
- 1 tablespoon olive oil
- 2 teaspoons apple cider vinegar, or sherry vinegar
- 1 teaspoon minced garlic
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- In a small food processor or blender, puree all ingredients until smooth.
- Thin with a little water, if desired.
