How about a little splurge today? I think it’s time. We’ve been sooooo good since Christmas. It’s fun to go a little crazy sometimes and this is just the muffin to eat when you want to jump off of the bandwagon for a moment! And they’re little, so no worries. You guys know how much I love snickerdoodle everything.

Mini Snickerdoodle Muffins

Sweet little muffin cakes that would be perfect for a brunch, baby shower, bridal shower or any day with a cup of coffee.

Ingredients

For the muffin:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 egg, lightly beaten
  • 1/2 cup Italian Sweet Crème Coffee-mate Creamer, alternatively milk can be used
  • 1/3 cup coconut oil or butter, melted (I used coconut oil.)

For the topping:

  • 1/4 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup coconut oil or butter, melted (I used coconut oil.)

Instructions 

  • Preheat oven to 350 degrees F. Spray muffin cups with an all-natural cooking spray or line with paper muffin liners.
  • In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, cinnamon and salt. Make a well in the center of the mixture.
  • In a separate smaller bowl; whisk together egg, creamer (or milk) and 1/3 cup melted coconut oil(or butter).
  • Add egg mixture to the well of the flour mixture; stir until just moistened (batter will be thick and may be lumpy).
  • Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 15-20 minutes for mini muffins and 20-25 minutes for regular-sized muffins.
  • Meanwhile, combine 1/4 cup sugar and cinnamon in a shallow bowl. Put melted coconut oil (or butter) in a separate small bowl. When muffins are finished baking and have cooled for about 5 minutes, dip tops of muffins in the melted coconut oil (or butter), and then in the cinnamon sugar mixture.

Notes

Muffins are perfect for freezing so you can make these ahead of any party or just to have on hand for breakfast. Let cool completely before placing in a bag for storage.

You’re either going to love me or hate me, depending on which way you look at it, for sharing this Mini Snickerdoodle Muffin recipe with you. Oh.My.Goodness. These are so amazingly scrumptious. I’ve said it before and I’ll say it again, I don’t use the word amazing lightly, so you know these Snickerdoodle Muffins have to be off the chain fantabulous. You really don’t even need the extra coconut oil/cinnamon/sugar topping. These little gems are almost just as delightful without the topping.
