I’ve been noticing a very peculiar oatmeal recipe popping up on some of my favorite blogs. The creation is often called, “zoats”. This breakfast meal involves cooking grated zucchini right in with your oats when making oatmeal. This I had to try, but I wanted to be sure this bowl of oatmeal with green flecks was super scrumptious with no hint of veggie.

Well let me tell you, this Chocolate Protein Zucchini Oatmeal is awesome! You can’t taste even a trace of zucchini- this just tastes like a regular bowl of oats with chocolatey yumminess. I added a little peanut butter and fresh blueberries, which added even more delicious flavor. I like to add my sweetener after the oats are cooked and based on the amount that I’m serving myself. For 3/4 cup cooked oats (the serving size), I like to add about 1 1/2 packets of stevia.

Chocolate Protein Zucchini Oatmeal

Chocolate Protein Zucchini Oatmeal- a chocolatey scrumptious bowl of oats packed with protein and a boost of nutrients!

Ingredients

  • 3 cups water
  • 1 1/2 cup old-fashioned rolled oats, gluten-free as needed
  • 1 cup grated zucchini, about 1 large zucchini
  • 1 scoop chocolate protein powder*, about 28 grams
  • Optional toppings: fresh blueberries, all-natural peanut or almond butter and shredded unsweetened coconut

Instructions 

  • Bring water to a boil in a medium saucepan over medium-high heat.
  • Add oats; mix well. Reduce heat to low. Gently boil, stirring occasionally, for about 4 minutes.
  • Meanwhile, grate one large zucchini. Don't worry about adding the excess water from zucchini. Your oats will not be too watery.
  • Stir in zucchini and continue to cook for about 3-5 more minutes and until oats are thick and soft. Remove from heat and stir in protein powder. Top with your favorite toppings. I enjoyed an addition of 2 tsps. peanut butter, a handful of fresh blueberries and unsweetened shredded coconut.
