Van’s National Foods contacted me several weeks ago, to remind me that August 24th is the day to celebrate everything waffles. Waffles are my VERY favorite breakfast, so there was no way I was going to let Waffle Day pass me by without celebrating.

Homemade waffles are great, but for hectic weekday mornings; I turn to Van’s Waffles for my waffle fix! They offer a variety of wholesome healthy waffles made with high-quality ingredients. Some of my favorite options are the gluten-free blueberry, gluten-free buckwheat with berries, mini chocolate chip, organic whole grain flax and power grains.

There are a myriad of possibilities for creating awesome waffles. I typically top my waffles with nut butter and fruit or a drizzle of honey or maple syrup. This Cherry Almond Compote looks fancy, but it’s actually quick and easy. You can have it made up and ready to go while your waffles are toasting. It’s also figure-friendly and full of good for you antioxidants.

Cherry Almond Compote

Jazz up your waffles with a quick, easy, figure-friendly cherry almond compote!

Ingredients

  • 1/2 cup fresh or frozen cherries, pitted
  • 1 tablespoon honey
  • 1/4 teaspoon almond extract
  • dash of cloves
  • almond slivers

Instructions 

  • Combine all ingredients in a microwavable bowl.
  • Heat in the microwave for 20 second increments until compote is of desired warmth.
  • Use compote to top waffles, pancakes, French toast, yogurt, oatmeal and/or cottage cheese. Add desired amount of almond slivers.

Notes

For serving more than one- just double, triple or quadruple the recipe.
