Breakfast Sweet Potato

I’m always looking for ways to change up my morning meal and I usually like to keep things on the sweet side. During the workweek, I don’t have extra time to whip up a breakfast that takes longer than 5 minutes. Soooooo… I introduce the Breakfast Sweet Potato. These Breakfast Sweet Potatoes make for a delicious and satisfying breakfast and are easy because they can be prepped ahead of time during meal prep.
This tasty meal could not be easier. I typically roast up a few sweet potatoes over the weekend, to enjoy throughout the week. Just pop them in the oven for about an hour at 400 F. I like the texture and taste better when I cook them in the oven, but this totally works on a microwave potato too.
If you’re going the microwave route, simply pop a sweet potato in the microwave and heat for about 5 minutes. Once your sweet potato is nice and soft, slice it down the center and add a chopped Simple Nut Bar from Nature Valley.
