Waffles are my all-time favorite breakfast food and I’ve been experimenting with creating a healthier waffle recipe that’s packed with protein, but not lacking in the yumilicious department. Lightly crispy on the outside. Soft and chewy on the inside with a lovely cinnamon sweetness. That’s exactly what you’ll find with these cinnamon protein waffles!

Some trial and error, plenty of taste-testing and a little trick is all it took to bring you your new favorite waffle recipe. The secret to waffles that are light and fluffy on the inside and have that slight crisp on the outside is beating the egg whites, separate from other ingredients, and then folding them into the batter as the last ingredient added.

I used one of my favorite kitchen appliances, the KitchenAid Stand Mixer, to beat the egg whites until foamy and light.  Beat at high speed for several minutes. You’ll see the egg whites get nice and airy, which is exactly what gives your waffles such a wonderful texture.

But if you want to know what really takes this protein waffle over the top, it’s the warm cinnamon-spice apple topping… oh my goodness it is so delicious! In fact, you may be more interested in the apple goodness than you are the waffles. I’m for sure counting down the days until apple season is officially here.

Cinnamon Protein Waffles with Warm Apple Topping

These hearty cinnamon protein waffles pack a major protein punch and thanks to the warm apple topping, this breakfast meal is also full of flavor!

Ingredients

For the waffles:

  • 2 cups oat flour, grind raw oats in a blender or food processor to make flour
  • 2 tablespoons ground flaxseeds
  • 3/4 cup vanilla protein powder
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 pinch sea salt
  • 1 teaspoon pure vanilla extract
  • 2 cups unsweetened vanilla almond milk
  • 4 large egg whites, 1/2 cup, beaten till foamy

For the warm apple topping:

  • 3 cups chopped apple, about 2 medium apples, I used pink ladies
  • 1 tablespoon coconut oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 tablespoon pure maple syrup
  • 1/4 cup water

Instructions 

  • Preheat waffle maker and spray with a nonstick cooking spray.
  • Combine all dry ingredients (oat flour through sea salt) in a medium bowl.
  • Add vanilla and almond milk to flour mixture; stir until smooth.
  • Beat egg whites for a couple of minutes and until light and foamy. Gently fold egg whites into batter.
  • Cook batter in preheated waffle iron according to waffle maker instructions.
  • While waffles are cooking, make warm apple topping.
