Baked Strawberry Chocolate Chip Pancake Squares

It's the pancake recipe for those of us that have no patience for flipping- Baked Strawberry Chocolate Chip Pancake Squares are super easy to make and your kiddos will jump up out of bed for this deliciousness.

Ingredients

  • 1 large egg
  • 3/4 cup unsweetened vanilla almond milk, or other preferred milk
  • 1 cup pancake mix, I like Kodiak Cakes*
  • 6-7 large strawberries, finely diced**
  • 1/3 cup mini chocolate chips

Instructions 

  • Preheat oven to 350 degrees F. and spray an 8x8 baking pan with cooking spray.
  • In a medium-large mixing bowl, beat egg and stir just slightly with pancake mix. You don't want to overmix.
  • Gradually stir in strawberries and chocolate chips.
  • Bake for 20-25 minutes. Serve with syrup or honey and enjoy!

Notes

*Instead of pancake mix, you can use a combined mixture of 1 cup flour with 2 teaspoons baking powder, 1 tablespoon sugar and 1/4 teaspoon salt.
**These pancake squares are also really good without the strawberries and/or chocolate chips. Blueberries or another variety of diced fruit would also work well.
