Baked Strawberry Chocolate Chip Pancake Squares

It’s the pancake recipe for those of us that have no patience for flipping- Baked Strawberry Chocolate Chip Pancake Squares are super easy to make and your kiddos will jump up out of bed for this deliciousness.
Yes, this breakfast meal is super simple, but there’s one thing that’s necessary- a working oven. - 1 large egg
- 3/4 cup unsweetened vanilla almond milk or other preferred milk
- 1 cup pancake mix I like Kodiak Cakes*
- 6-7 large strawberries finely diced**
- 1/3 cup mini chocolate chips
Preheat oven to 350 degrees F. and spray an 8x8 baking pan with cooking spray.
In a medium-large mixing bowl, beat egg and stir just slightly with pancake mix. You don't want to overmix.
Gradually stir in strawberries and chocolate chips.
Bake for 20-25 minutes. Serve with syrup or honey and enjoy!
*Instead of pancake mix, you can use a combined mixture of 1 cup flour with 2 teaspoons baking powder, 1 tablespoon sugar and 1/4 teaspoon salt.
**These pancake squares are also really good without the strawberries and/or chocolate chips. Blueberries or another variety of diced fruit would also work well.
