Apple Pie Oatmeal Cookies with Date Drizzle

These Apple Pie Oatmeal Cookies taste just like their namesake. Sweet apple with hearty whole grain oats, cinnamon and date drizzle make these cookies absolutely irresistible!
Baking and eating have always been two of my most favorite things about the holidays. No surprise, I know! There are some beloved recipes that are made every year; like Swedish Teacakes, Almond Strips and Snickerdoodles. However, I also really enjoy creating new festive sweet treats, too! I wanted to go with something really unique and believe me these Apple Pie Oatmeal Cookies are not your typical Christmas cookie… they’re way better! #MyOatsCreation
When brainstorming what type of cookie would be perfect to add to my holiday baking list; I knew I wanted to include old fashioned oats in my recipe. My family only has one other cookie with oats that we enjoy during the holidays. While shopping at Target for all of my cookie ingredients, I came across the limited edition Quaker Oats Old Fashioned Oats 42oz and Quaker Oats Quick Oats 42oz winter canisters. These special winter canisters are available at Target and for a limited time.
This recipe is super easy, but there are a few important steps to follow so that your cookies are out of this world. Once you’ve combined your dry and wet ingredients; the mixture will be pretty wet and sticky. You’ll want to put your mixture in the fridge for about 30 minutes. When you take the cookie dough out of the fridge, you’ll notice a definite difference in the texture of the cookie dough. Drop spoonfuls of the dough onto your prepared baking sheet. Your cookies won’t flatten much in the oven, so if you prefer a flatter cookie- I do, press the cookie dough slightly with your fingers before baking.
These cookies are very soft (my favorite kind of cookie) and have the perfect apple cinnamon flavor. In my opinion, they are sweet enough and still fabulous without the date drizzle. The date drizzle, though, makes them extra special. It tastes a lot like caramel sauce… dates are truly nature’s candy! It’s also perfect used as a dip for apple slices or used as a topping for pancakes, oatmeal and many other yummy foods.
Apple Pie Cookies with Date Drizzle
Ingredients
For the cookies:
- 1 cup old fashioned rolled oats or instant oats
- ¾ cup whole wheat, gluten-free or all-purpose flour (measure by spooning flour into cup)
- 1 ½ teaspoon baking powder
- 1 ½ teaspoon ground cinnamon
- 1/8 teaspoon salt
- 2 tablespoons coconut oil or unsalted butter, melted
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- ½ cup maple syrup
- ¾ cup grated apple, about 1 medium apple, I used a smaller organic Honeycrisp
For the date drizzle
- 1 cup Medjool dates, pitted and tightly packed
- 1 teaspoon pure vanilla extract
- 2 1/2 tablespoons melted coconut oil
- Scant 1/4 teaspoon sea salt
- Water
Instructions
For the cookies:
- If using old fashioned rolled oats; pulse in a food processor 5-8 times.
- In a medium bowl, whisk the oats, flour, baking powder, cinnamon, and salt. In a separate bowl, whisk the coconut oil, egg, vanilla and maple syrup.
- Add the dry mixture into the wet mixture and stir, just until combined. Fold in the grated apple. Chill the dough for at least 30 minutes.
- Preheat oven to 325°F, and line a baking sheet with parchment paper or a Silpat or spray with a natural cooking spray.
- Drop the cookie dough into rounded scoops on the baking sheet. Slightly flatten cookies by gently pressing with your fingers or the back of the spoon. Bake at 325°F for 12-15 minutes. Cool on the baking sheet for at least 15 minutes.
For the date drizzle:
- Heat two cups of water in a saucepan till warm (not scalding hot). Place the dates in a bowl and pour the hot water over them. Allow them to sit for 15-20 minutes.
- Drain the dates, reserving the water. Place them into a blender with 3/4 cup of the soak water, the vanilla, the coconut oil, and the salt. Blend them on a high speed till they are very smooth and resemble a sauce. Add more water as needed, until the sauce is thick but can be drizzled.
- Sauce will keep in the fridge for up to 5 days.
- Drizzle the desired amount of date sauce over the cookies.
