I’ve been wanting to make a baked pancake- a Dutch baby, for so long. A Dutch baby is a German cross between a pancake and popover, usually baked in a skillet. Cinnamon sweet pears nestled under a blanket of your favorite flapjack mix and topped off with fresh fruit and a dusting of powdered sugar- truly the perfect way to start your day with no flipping required.

As Dutch babies bake they turn golden brown and fluff up. As soon as you remove it from the oven it will deflate. I’ve wanted to create one forever, but they always seemed a bit complicated. I decided to try simplifying the recipe and use Kodiak Cakes flapjack mix. Best decision ever!

This cinnamon pear Dutch baby turned out to be incredibly easy, and oh so delicious. Even though, this Dutch baby is light and figure-friendly, it actually tasted quite decadent and could be served for a special breakfast or brunch and would even make a lovely dessert.

Easy Cinnamon Pear Dutch Baby

Cinnamon sweet pears nestled under a blanket of your favorite flapjack mix and topped off with fresh fruit and a dusting of powdered sugar- truly the perfect way to start your day with no flipping required.

Ingredients

  • 2 tablespoons coconut oil
  • 1 pear, cored and sliced
  • 1 teaspoon ground cinnamon
  • 1 cup Kodiak Cake Flapjack and Waffle Mix, or other favorite pancake mix
  • 1 cup water
  • Optional for garnish- powdered sugar, fresh fruit, whipped cream, maple syrup

Instructions 

  • Preheat oven to 400 degrees F. Heat coconut oil in a 9-inch skillet over medium-high heat. Add pear slices and cinnamon to skillet and frequently stir until pear slices are softened, about 3-5 minutes.
  • Meanwhile stir together Kodiak Cake Flapjack and Waffle Mix and water in a medium bowl.
  • Once pear slices are soft, make sure they are evenly distributed in the skillet and pour flapjack batter over pear slices. If needed, use the back of a spoon to spread the flapjack batter over the pear slices.
  • Immediately remove skillet from heat and place in the oven to bake at 400 degrees F. for about 20 minutes and until toothpick inserted comes out clean.
  • Cut into triangular-shaped slices, garnish with your favorite toppings and enjoy!

Notes

Make sure you use an oven-safe skillet such as cast iron. You start the pancake on the stove and finish in the oven.
