How to Make Small Batch Snickerdoodles
These small-batch snickerdoodle cookies are simple from start to finish, with no mixer, no chilling, and just a handful of pantry staples needed. Before you begin, heat your oven to 350°F and prepare a cookie sheet with parchment paper or a silicone baking mat.

Step 1: Butter and sugar. In a medium bowl, stir together the butter and sugar until smooth and combined. If the butter is softened (not melted), use the back of the spoon to press and mash everything together until creamy.

Step 2: Egg yolk and vanilla. Mix in the egg yolk and 1 teaspoon vanilla until well combined.

Step 3: Mix in dry ingredients. Add the flour, cream of tartar, baking soda, and salt. Stir until a soft dough forms. It may look a little flour-heavy at first, but keep mixing and it will come together.

Step 4: Cinnamon-sugar mixture. In a small bowl, mix the 1/2 tablespoon cinnamon and 2 tablespoons sugar for rolling.

Step 5: Roll dough. Scoop dough into 6 equal portions (34 grams each), roll into balls, then coat in cinnamon sugar, and place on the prepared baking sheet.

Step 6: Bake and cool. Bake for 10–12 minutes, until the edges are set and the centers are slightly soft. Let them cool on the baking sheet for a few minutes before transferring to a cooling rack.
Storing and Freezing Tips

- Freezing cookie dough: Scoop the dough into individual portions and place on a parchment-lined baking sheet. Once frozen solid, transfer the dough balls to a freezer-safe bag and store for up to 3 months.
- Baking frozen dough: No need to thaw! Bake the frozen cookie dough as directed, adding an extra 1–2 minutes if needed.

- 1/4 teaspoon baking soda

- 1/2 tablespoon ground cinnamon
- 2 tablespoons granulated sugar
