Cut Out Sugar Cookies are a staple this time of year. Every holiday season my kids and I enjoy rolling out sugar cookie dough, stealing bites of the buttery dough, pressing our favorite holiday shapes into the dough and then baking up the yummy cookies. Considering I have such difficulty keeping my hands out of the cookie jar; I’ve been wanting to create Skinny Cut Out Sugar Cookies, that are still buttery delicious, for quite some time. This is not an easy feat, but this year I’ve totally done it!

Skinny Cut Out Sugar Cookies- no guilt about having more than one of these delicious little treats!

I’m going to be very honest with you. These sugar cookies are very delicious and kid-approved, but they have a little bit of a different texture than your typical butter-filled sugar cookie. However, if you’re looking for a lighter, vegan sugar cookie that is made with all clean ingredients – icing included, give these skinny cut out sugar cookies a try.

Skinny Cut Out Sugar Cookies

At just over 100 calories per cookie, no need to feel guilty about eating more than one of these delicious little treats!

Ingredients

For the cookies:

  • 1 cup whole wheat pastry flour + 1-2 tablespoons more, as needed
  • 1 teaspoon baking powder
  • 3 tablespoons coconut oil
  • 1/4 cup honey
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon

For the icing:

  • 1 cup raw cashews, soaked in water for a few hours or overnight
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • 1/4 cup almond milk, or other milk, may need a few tablespoons more of almond milk for consistency

Instructions 

  • Preheat oven to 350 degrees F.
  • Mix all ingredients together in a large mixing bowl.
  • If the dough is wet and sticky, knead in additional flour, 1 tablespoon at a time until you have a soft dough that is not sticky. If dough is too dry, add a little more oil. (I did not need to add additional flour or oil)
  • Roll dough out, on a floured surface, to 1/4 inch thickness and cut with cookie cutters. Continue this process- rerolling out dough and cutting with cookie cutters, until you have used up all of the dough.
  • Transfer cookies to a parchment lined cookie sheet and bake for about 8-12 minutes.
  • While cookies are baking, blend all icing ingredients in a blender or food processor. Allow cookies to cool completely before decorating them with icing.

Notes

Cookies are great for making ahead and freezing. Get your holiday baking done ahead of time!
