Baked Brie in puff pastry makes a show-stopping addition to any gathering! Creamy brie is topped with crunchy almonds and sweet-tart raspberry preserves, and wrapped in golden, flaky puff pastry. You only need 5 ingredients and 10 minutes of prep time!
1/4cupraspberry preserves or any favorite preserves
1largeegg beaten
crackers, toasted baguette slices and/or sliced apples for serving
Instructions
Preheat oven to 425ºF. and line a baking sheet with parchment, or bake in a greased pie plate.
Place the thawed puff pastry sheet on the prepared baking sheet. The puff pastry will take about 40 minutes to thaw. Read package instructions.
Place cheese wheel in the middle of the puff pastry (leave rind on). Spread preserves on top of cheese and sprinkle almonds on top of preserves.
Fold the corners over the brie, forming a neat package. Gently press the edges against the brie and neaten up the sides.
Brush the pastry all over with 1 beaten egg. Be sure to get the sides and around the folds. Try not to let the egg puddle under the brie. Bake for 20-25 minutes.
Remove from oven and let cool for five to ten minutes. Use the parchment to transfer to a serving tray or if using a pie plate, serve straight in that. Enjoy with your favorite crackers, sliced baguette and apple slices, if desired.
Notes
Nuts: Any nuts will work. Pecans, almonds, walnuts and pistachios are great choices. If you want to keep this nut-free, feel free to leave them off.
Preserves: Raspberry and apricot are favorites of mine, but fig jam would be delicious too. Really any jam would be very tasty!
