Quinoa Pancakes

Superfood pancakes.... fluffy and delicious!
Ingredients
  • 3/4 cup cooked quinoa
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • pinch of sea salt
  • 1 packet stevia optional
  • 1/4 teaspoon vanilla
  • 2 eggs
Instructions
  1. Heat a large skillet (or griddle), sprayed with cooking spray or coated with coconut oil, over medium heat.
  2. In a medium bowl, combine all ingredients.
  3. Pour batter onto skillet (or griddle), making 4 pancakes.
  4. Allow pancakes to cook slowly over medium heat for about 3-5 minutes on the first side, until pancakes are set. Flip and cook for another 1-2 minutes.
  5. Serve with maple syrup, honey, nut butter and/or fresh fruit.
