Zesty, flavorful and light, this Roasted Red Pepper Vinaigrette will perk up any salad... and any salad lover!
- 1 cup chopped jarred roasted red peppers rinsed and drained
- 1 tablespoon olive oil
- 2 teaspoons apple cider vinegar or sherry vinegar
- 1 teaspoon minced garlic
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
In a small food processor or blender, puree all ingredients until smooth. Thin with a little water, if desired.
