Servings:6 1 cup servings
fresh broccoli florets (about 2 medium heads)
diced red onion
large apples, finely chopped (I used gala apples)
sliced dry roasted almonds, or sunflower seeds or nuts of choice
dried cranberries (optional)
5-6 oz container plain Greek yogurt (3/4 cup)
clean ingredient mayo or additional Greek yogurt
apple cider vinegar
honey or sweetener of choice, to taste
salt, to taste
pepper, to taste
In a large bowl combine broccoli, carrots, red onion, apples, almonds, and dried cranberries.
To make the dressing: Whisk together Greek yogurt, mayo, apple cider vinegar, honey, salt and pepper.
Add the dressing to the salad and toss to coat. Chill until ready to serve.
This recipe can easily be made dairy free and Whole30 by using subbing the yogurt out for a clean Whole30 approved mayo and omitting the sweetener.
Or make it dairy free by using a dairy free yogurt.
