Healthy Broccoli Apple Salad

  • 6 cups fresh broccoli florets (about 2 medium heads)
  • ½ cup shredded carrots
  • ¼ cup diced red onion
  • 2 large apples, finely chopped (I used gala apples)
  • 1/3 cup sliced dry roasted almonds, or sunflower seeds or nuts of choice
  • 1/3 cup dried cranberries (optional)
  • 1 5-6 oz container plain Greek yogurt (3/4 cup)
  • 1/4 cup clean ingredient mayo or additional Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1/2-1 tablespoon honey or sweetener of choice, to taste
  • 1/4 teaspoon salt, to taste
  • 1/8 teaspoon pepper, to taste
  1. In a large bowl combine broccoli, carrots, red onion, apples, almonds, and dried cranberries.
  2. To make the dressing: Whisk together Greek yogurt, mayo, apple cider vinegar, honey, salt and pepper.
  3. Add the dressing to the salad and toss to coat. Chill until ready to serve.
Recipe Notes

This recipe can easily be made dairy free and Whole30 by using subbing the yogurt out for a clean Whole30 approved mayo and omitting the sweetener. 

Or make it dairy free by using a dairy free yogurt.
