Easy roasted red potatoes are a kitchen staple and a go-to side dish. They are seasoned with dill and oven roasted until golden brown and super delicious! Roasted red potatoes make the perfect, easy, flavorful side dish. These simple roasted potatoes pair fabulously with a variety of meals and work well as a breakfast, lunch or dinner food. I will warn you, though, these taters are super addicting!
Preheat oven to 450ºF. and prepare a baking sheet with cooking spray, foil (if preferred), Silpat mat or parchment paper.
Place the potatoes, olive oil, garlic salt, onion powder and dill in a large bowl and toss until well coated.
Spread out evenly onto a large baking sheet. Roast in the oven for 25-35 minutes, or until fork tender and the edges are golden brown. Toss half way through. Salt and pepper, to taste.
*You can also use fresh dill. Increase the amount to about 3-4 tablespoons of fresh herbs. Also, feel free to use any combination of like
