Ingredients

  • 10-16 ounce bag of frozen stir-fry veggies
  • 12-16 ounce bag of riced cauliflower or 1 large head of cauliflower*
  • 1 10.5 ounce package Gardein Sweet and Sour Porkless Bites
  • Salt to taste
  • 2 tablespoons chopped cilantro or parsley for garnish

Instructions

  • If you did not purchase pre-riced cauliflower - chop the cauliflower into roughly 1-inch pieces. Add about 1/4 to 1/3 of the cauliflower to a food processor. Don't try to do too much at once; you will get half mush and half chunks. PULSE the cauliflower in 1-second bursts, until it looks about the size of grains of rice. Repeat with the remaining cauliflower.
  • In a wide-bottom skillet, heat a little olive oil or cooking spray. Add frozen veggies to skillet and cook for about 3-5 minutes; stirring occasionally. Add cauliflower rice and Gardein Sweet and Sour Porkless Bites with sauce.
  • Stir mixture and continue to cook until the cauliflower is tender and Porkless Bites are cooked, about 5-8 minutes.
  • Remove from heat and garnish with additional lime and cilantro or parsley, if desired.

Notes

*I like to buy pre-riced cauliflower. It's way less mess and a huge timesaver. You can find this in the frozen foods or buy fresh in the produce department.
