This is one of those comfort food dishes that you make when a serious takeout craving hits, but you still want to cook at home to save a few calories and dollars. It’s the perfect balance of spicy, sweet, and savory. It’s also loaded with plant-based protein and comes together in just 20 minutes!

For starters, this dish is served over cauliflower “rice” instead of regular rice because you can eat an ENTIRE head of cauliflower instead of 1/2 a cup of rice and STILL only consume a fraction of the calories and carbohydrates, so why not?!

Cauliflower rice is SO simple and you absolutely must try it! It doesn’t pass completely as rice since the textures and flavors are slightly different. But it looks just like rice and, in my opinion, tastes even better as it absorbs the sauce perfectly and takes WAY less time to cook.

To top off the cauliflower rice, I used Gardein Sweet and Sour Porkless Bites found at Kroger stores in the frozen food aisle. This was my first time trying a product from Gardein and I can tell you, I’m hooked. It really brought out the deliciousness of this meal in a major way!

Easy Vegan Cauliflower Rice Stir-Fry

Extremely flavorful, Easy Vegan Cauliflower Rice Stir-Fry in just 20 minutes! Spicy-sweet, protein-packed, and a lighter spin on takeout!

Ingredients

  • 10-16 ounce bag of frozen stir-fry veggies
  • 12-16 ounce bag of riced cauliflower or 1 large head of cauliflower*
  • 1 10.5 ounce package Gardein Sweet and Sour Porkless Bites
  • Salt to taste
  • 2 tablespoons chopped cilantro or parsley for garnish

Instructions 

  • If you did not purchase pre-riced cauliflower - chop the cauliflower into roughly 1-inch pieces. Add about 1/4 to 1/3 of the cauliflower to a food processor. Don't try to do too much at once; you will get half mush and half chunks. PULSE the cauliflower in 1-second bursts, until it looks about the size of grains of rice. Repeat with the remaining cauliflower.
  • In a wide-bottom skillet, heat a little olive oil or cooking spray. Add frozen veggies to skillet and cook for about 3-5 minutes; stirring occasionally. Add cauliflower rice and Gardein Sweet and Sour Porkless Bites with sauce.
  • Stir mixture and continue to cook until the cauliflower is tender and Porkless Bites are cooked, about 5-8 minutes.
  • Remove from heat and garnish with additional lime and cilantro or parsley, if desired.

Notes

*I like to buy pre-riced cauliflower. It's way less mess and a huge timesaver. You can find this in the frozen foods or buy fresh in the produce department.
