Ingredients

  • 4 teaspoons instant coffee granules
  • 2/3 cup canned pure pumpkin
  • 1 1/2 teaspoons pumpkin pie spice
  • 2/3 cup milk any kind even non-dairy works fine
  • 2/3 cup half and half or more milk but it won’t be as rich, use canned coconut milk for a dairy-free alternative
  • 2 teaspoons maple syrup or to taste, replace with sweetener of choice
  • 1 teaspoon vanilla extract
  • 2 cups ice
  • Optional for toppings: whipped cream, pumpkin pie spice

Instructions

  • Add all ingredients to a blender.
  • Blend until smooth and frosty. Then, adjust the consistency, as needed. If the mixture is too thick, add a splash more milk; if it’s too thin, add extra ice.
  • Pour into a glass and top with any desired toppings.

Notes

Variations to try:
  • Dairy-free and vegan: Swap the milk and half-and-half with almond, oat, or coconut milk. For the topping, use coconut whipped cream or almond whipped cream.
  • Sweetener options: Try honey, agave, or stevia in place of maple syrup for a different sweetness level. Brown sugar or coconut sugar also add a rich, caramel-like flavor.
  • Decaf: Use decaf instant coffee or skip the coffee entirely if you’d like a caffeine-free treat; the pumpkin and spice flavors still shine!
