This protein bar recipe makes chewy, no-bake bars packed with oats, peanut butter, and crispy Rice Krispies, then topped with chocolate. They’re an easy snack for meal prep or whenever you need a quick bite.
1½cups(120g) old-fashioned rolled oats(use protein oats for extra protein)
1½cups(40g) Rice Krispies cereal
¾cup(120g) semi-sweet chocolate chips
¼cupMini M&M's(optional)
Instructions
Line an 8×8-inch baking dish with parchment paper, leaving a little overhang on the sides for easy removal.
In a large bowl, stir together the melted (drippy) ½ cup (127g) creamy peanut butter, ½ cup (170g) honey or maple syrup, ½ cup (100g) brown sugar, 3 scoops (90g) vanilla protein powder, and ¼ cup milk until well combined.
Add the 1½ cups (120g) old-fashioned rolled oats and 1½ cups (40g) Rice Krispies cereal. Gently fold until everything is evenly coated and the mixture sticks together. If it feels too dry, add a little more milk, 1 tablespoon at a time.
Transfer the mixture into the prepared baking dish and use the back of a spoon or spatula to firmly press it into an even layer.
Melt the ¾ cup (120g) semi-sweet chocolate chips in the microwave in 20-second intervals, stirring well between each, until smooth. Alternatively, you can also melt the chocolate in a small saucepan over low heat on the stovetop.
Spread the melted chocolate over the top of the peanut butter and oat mixture.
While the chocolate is still warm, sprinkle the ¼ cup Mini M&M's over the top and gently press them into the chocolate to help them stick.
Place the pan in the freezer for at least 2 hours, or until the bars have set and feel firm.
Use the parchment paper to lift the bars from the pan, then cut into 12 squares or rectangles. Serve right away, or store any leftovers in the refrigerator or freezer to maintain the best texture.

Freeze: For longer storage, freeze the bars in an airtight container for up to 3 months. Let them thaw at room temperature for 5–10 minutes before enjoying.
