Instructions
Melt 1/2 cup (1 stick) unsalted butter in a large skillet over a medium-low heat. Add 1 1/2 cups finely chopped yellow onion and cook, stirring occasionally, for about 30 minutes and until the onions are lightly browned and soft. Onions should be cooked slow and you will want them fully cooked for best results.
Stir in 1/4 cup all-purpose flour in with onions. Then add the 1/4 teaspoon dried thyme leaves, 1/2 teaspoon salt and 1/2 teaspoon ground black pepper. Stir and cook for 2 to 3 minutes.
Add the heated 2 cups chicken stock and 1 tablespoon Cognac, Brandy or Bourbon (if using). Cook uncovered for 4 to 5 minutes, until thickened. Stir in the 1 tablespoon heavy cream, and serve warm.

I recommend doubling the recipe if you're cooking for more than about 5 people.
