Ingredients

  • 1 pound penne pasta or other short grain variety
  • 1 cup milk
  • 1 cup low-sodium chicken broth
  • 1 (16 oz) bottle Olive Garden© Italian dressing
  • 1 shredded rotisserie chicken (about 3-4 cups)
  • 1 tablespoon Italian seasoning
  • 1 pint halved baby tomatoes cherry or grape tomatoes
  • 1 medium chopped zucchini
  • 8 oz block cream cheese
  • 2 cups shredded Italian style cheese

Instructions

  • Preheat your oven to 425°F and lightly grease a 9×12-inch baking dish.
  • Add the 1 pound penne pasta, 1 cup milk, 1 cup low-sodium chicken broth, 1 (16 oz) bottle Olive Garden© Italian dressing, 1 shredded rotisserie chicken (about 3-4 cups), and 1 tablespoon Italian seasoning to the prepared dish. Stir everything together, making sure the pasta is mostly submerged in the liquid.
  • Scatter the 1 pint halved baby tomatoes and 1 medium chopped zucchini evenly over the pasta mixture.
  • Place the 8 oz block cream cheese in the center of the dish.
  • Cover tightly with foil and bake for 35 minutes.
  • Remove the foil and stir thoroughly until the cream cheese melts into the mixture and creates a creamy sauce.
  • Sprinkle the 2 cups shredded Italian style cheese evenly over the top.
  • Return the dish to the oven and bake uncovered for another 15 minutes, until the cheese is melted and bubbly.
  • Let the dish rest for 5-10 minutes before serving. Makes 6-8 servings.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 4 days

Reheating

Adding a little milk or broth before reheating helps bring the creamy sauce back to life and keeps the pasta from drying out.
  • Microwave: Cover loosely and microwave in 30–60 second intervals, stirring between each, until heated through.
  • Oven: Place the pasta in an oven-safe dish, add a splash of milk or broth, and cover with foil. Reheat at 350°F until warmed through, about 20-30 minutes.
