Apple Pecan Quinoa Granola

Ingredients
  • 3 cups old-fashioned rolled oats*
  • 1/2 cup uncooked quinoa
  • 1 cup chopped pecans
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/8 teaspoon salt
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/3 cup pure maple syrup**
  • 3/4 cup dried cranberries or craisins
  • 3/4 cup dried apple chips
Instructions
  1. Preheat oven to 325F degrees. Line two large baking sheets with silicone baking mats, foil or parchment paper. Set aside.

  2. In a large bowl, toss the oats, quinoa, pecans, cinnamon, nutmeg, cloves, and salt together until combined. Set aside.
  3. In a medium bowl, whisk together the oil, vanilla, applesauce, and maple syrup. Pour mixture over dry ingredients and stir until everything is moistened. Spread onto two baking sheets and bake for 45 minutes, making sure to stir the granola every 10-15 minutes to prevent burning. Allow granola to cool for 20 minutes on the baking sheets. This will help it get crunchier. Pour into a large bowl and add the dried cranberries and dried apple chips.

  4. Cover tightly and store at room temperature for up to 2 weeks.
Recipe Notes

*Make sure your oats are certified gluten free if you have an intolerance.

**You may use honey, agave, or light corn syrup as the liquid sweetener. Keep in mind that using honey means your granola is no longer vegan. I used a low sugar maple syrup.

***Sometimes I’ll turn the temperature down to 300F degrees during baking if I feel like it’s baking a little too fast for my liking. We only have temperature increments of 25 degrees, so I don’t have the option for a 315F degree setting or anything. It works fine for me to just sort of eyeball it, but if I were to pick a really specific number, I’d choose something between 325 and 300 degrees.
