Grandma's Pumpkin Pie Dessert Squares

Ingredients

For the crust

  • 1 box yellow cake mix 1 cup reserved
  • 1 egg
  • 1/2 cup butter melted

For the filling

  • 3 cups Libby's pumpkin pie mix (this is not the same as canned pumpkin puree) 1 lb. 14 ozs.
  • 2 eggs
  • 2/3 cups milk I used skim milk.

For the topping

  • 1 cup reserved cake mix
  • 1/4 cup sugar I used brown sugar.
  • 1 teaspoon cinnamon
  • 1/4 cup butter melted

Instructions

  • Preheat oven to 350F and spray a 13 x 9 inch baking dish with non-stick cooking spray.
  • Combine the ingredients for the crust and press into the bottom of the pan.
  • Combine the ingredients for the filling and pour over the crust.
  • Combine the ingredients for the topping and sprinkle over crust.
  • Bake at 350F for 45 to 50 mins.
  • Allow squares to cool for about 20 minutes and then store in the fridge (at least 3-4 hours) before serving.
  • Bars will be tasty at room temperature, but are best served COLD with cool whip.

Notes

These are a Thanksgiving tradition in my family and surely they will be for yours as well!
