Chocolate Chip Pumpkin Waffles

With a sweet pumpkin flavor and warm fall spices, these Chocolate Chip Pumpkin Waffles are an irresistibly perfect treat for this time of year!
Ingredients
  • 2 tablespoons coconut flour*
  • 1/2 teaspoon pumpkin pie spice or cinnamon
  • 3 tablespoons 15-16 grams and about 1/2 scoop protein powder**
  • 1-2 packets Stevia*** or other preferred sweetener, as desired
  • 1 tsp baking powder
  • 1/2 cup liquid egg whites or egg whites from 4 eggs
  • 1/4 cup pumpkin puree
  • 1/4 cup unsweetened vanilla almond milk or other nondairy milk of choice
  • 2-4 tablespoons mini chocolate chips**** optional
Instructions
  1. Heat waffle iron and spray it with a nonstick cooking spray.
  2. Mix all of the ingredients (except chocolate chips) in a medium bowl. Combine until batter is smooth and there are no clumps. Stir in chocolate chips, if using.
  3. Pour batter into heated waffle iron and cook for about 4 minutes on medium, depending on waffle iron instructions. Mine automatically sounds an alarm when waffle is cooked through.
  4. Top with favorite toppings; such as maple syrup, almond butter and/or fresh fruit.
Recipe Notes

*I would not suggest substituting the coconut flour for any other flour, as it acts very different than other flours.
**Use a vegan or gluten-free protein powder for nondairy and/or gluten-free waffles. I used Quest Protein Powder Multi-Purpose Mix.
***If adding mini chocolate chips, sweetener is not necessary- particularly if you'll be topping your waffle with maple syrup.

Cooking: I have a waffle maker that makes one large belgian waffle at a time. There was a bit too much batter for one large waffle. I would suggest making 2 smaller waffles, if your waffle iron situation is like mine.
Freezing: These waffles freeze perfectly! Just store in freezer-safe plastic bags and pop individual waffles into the toaster or oven until warmed through.
