White Chicken Chili

One of my all time favorite chili recipes. Use up Thanksgiving leftovers by using turkey instead of chicken or use rotisserie chicken for an easy and quick prep.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium onion finely chopped
  • 1 4 oz can chopped green chilis
  • 3 tablespoon 100% white whole wheat flour any flour works
  • 2 tsp ground cumin
  • 2 16 oz great northern beans or white navy beans, drained and rinsed
  • 1 14.5 oz can chicken broth
  • 1 1/2 cups finely chopped or shredded chicken or turkey cooked
  • salt & pepper to taste
  • Favorite toppings I like shredded cheese, greek yogurt, salsa and avocado.

Instructions

  • In a large skillet, cook onion in oil for 5 mins or until transparent. Add chilies, flour and cumin; cook and stir for 2 mins.
  • Add beans and chicken broth; bring to a boil.
  • Reduce heat; simmer for 10 mins or until thickened.
  • Add chicken or turkey; cook until hot.
  • Garnish with your preferred toppings and add salt & pepper to taste.
