The most delicious crisp ever! This totally proves that all-natural ingredients can be just as tasty as junk!

Ingredients

For the filling:

  • 5 peaches sliced and peeled
  • 1 cup fresh blueberries
  • 2 teaspoon cornstarch
  • 1/4 cup honey
  • 1/4 cup lemon juice

For the topping:

  • 1 cup rolled oats use gluten free, if desired
  • 1/2 c almond meal
  • 1/4 cup coconut sugar or brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup coconut oil melted

Instructions

  • Preheat oven to 375 degrees F and spray a 9-inch pie plate with a natural cooking spray.
  • Combine all filling ingredients in a medium bowl.
  • Combine all topping ingredients in a medium bowl.
  • Pour filling ingredients into pie plate and sprinkle the oat mixture over the top.
  • Bake for 40 mins. Allow to cool slightly before spooning out.
  • Serve warm and with vanilla ice cream or coconut cream, if desired.

Notes

My family topped our crisp with coconut cream; which was delicious. For directions see this post. I used 1 can of coconut cream from Trader Joe's (full fat coconut milk works, too), 1 packet of stevia, 1 tsp cinnamon and 1 tsp vanilla.
