Southwestern Salmon Croquettes with Creamy Chipotle Sauce- a delicious, flavorful twist on the classic meatball with the perfect kick of spice! (gluten free and healthy)
Ingredients
  • The Croquettes:
  • 1 lb. skinless salmon cut into chunks
  • 1 teaspoon adobo sauce from canned chipotle peppers
  • 1 small chipotle pepper in adobo sauce canned and minced
  • ¼ cup + 2 tablespoons Van's Foods Everything Crackers crushed into crumbs
  • 2 tablespoons minced fresh cilantro
  • 1 egg white from large egg
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • The Sauce:
  • 1 small chipotle pepper in adobo sauce canned
  • 1 5.3 oz container fat-free plain Greek yogurt
  • 1 large avocado seeded and removed from peel
  • 1 clove garlic minced
  • ½ lime juiced
  • 5 tablespoon water
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon paprika
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon ground pepper
Instructions
  1. Preheat the oven to 350 degrees F. Coat a large baking sheet with cooking spray.
  2. Place the salmon in the bowl of a food processor. Pulse until finely chopped, scraping down the sides as necessary. Transfer to a large bowl.
  3. To the salmon add chipotle sauce, pepper, cracker crumbs, cilantro, egg white, and seasonings. Stir to combine.
  4. Using a 2 tablespoon portions of the salmon mixture, form croquettes by rolling between the palms of your hands. Place the croquettes on the prepared baking sheet, spacing evenly.
  5. Bake until the croquettes are firm to the touch and cooked through, 15 to 18 minutes.
  6. Serve the croquettes with the chipotle sauce.
  7. While meatballs are baking, in the bowl of a food processor or blender, combine the chipotle pepper, yogurt, avocado, garlic, lime juice, water and seasonings. Blend until smooth.
