Combine spices in a large baggie. Place cod inside baggie with spices, seal baggie and toss so that seasonings completely cover fish. Set aside.
Heat a large cast iron skillet to medium high heat with about 1/2 teaspoon olive oil. Add minced garlic and saute for about 20 seconds, then add in your cod fillets. Let fish sear for 2-3 minutes, then flip and cook another 2 minutes. When fish is completely cooked it will be white and flaky throughout. Remove to plate and repeat with additional fish fillets, if needed. Squeeze lime juice over fish.
While fish is cooking, prepare fruit salsa ingredients. Combine all fruits and stir in apple cider vinegar and honey. Once fish has cooked, top each fillet with fruit salsa.
Notes
It may be necessary to cook fish in two batches, depending on the size of your skillet. Not only is this recipe delicious served on its own, it also works well as a fish taco filling. If making fish tacos, be sure to make my avocado crema sauce. It's soooo good!
