2-3cupsshredded chickenI used a whole rotisserie chicken. Add more or less depending on your preference.
1teaspoonextra virgin olive oil
1onionfinely chopped
1canchili beansundrained
1canblack beansdrained and rinsed
1-1/2cupsfrozen corn or 1 can corn
1packagetaco seasoning or a favorite homemade taco seasoning recipeI used Trader Joe's taco seasoning packet; which only contains spices in it's ingredients.
2cupsof your favorite salsaUse mild or a bit less than 2 cups for a less spicy soup.
1-1/2cupswater
Instructions
In a large skillet over med-high heat, heat oil. Saute onion until tender, about 3-5 minutes.
Add all other ingredents, cover skillet, and bring to a boil. Turn heat down to simmer.
Simmer for 5 minutes.
Top with favorite toppings; such as plain greek yogurt, avocado, cheese and chips.
Notes
Add more water, if you like your soup a bit thinner.
This soup is wonderful served over eggs, rice or drained and wrapped up in a tortilla.
