Ingredients

  • 4 cups spinach or other favorite greens (feel free to chop, if preferred)
  • 1/2 to 1 apple, thinly sliced or diced
  • 1/4 to 1/2 cup blueberries
  • 3 to 4 tablespoons walnut pieces/halves or other favorite nut/seed
  • 1/4 to 1/2 cup red cabbage (optional)
  • 4 teaspoons flavored balsamic vinegar or favorite vinaigrette
  • Salt & pepper to taste
  • 3 to 4 tablespoons crumbled feta cheese or other favorite crumbled cheese like goat or blue cheese

Instructions

  • Place all salad ingredients in a large bowl and toss with balsamic vinegar or other favorite vinaigrette. 
  • Divide into two salads and add salt and pepper to taste. Enjoy!

Notes

Measurements provided are a guide, feel free to use a little less or a little more depending on preference.
MAKE IT VEGAN: Omit the cheese.
MAKE IT DAIRY FREE: Omit the cheese.
MAKE IT NUT FREE: Use sunflower seeds instead of walnuts.
MAKE IT PORTION FIX APPROVED: Use colored containers to measure out ingredients. This salad works perfectly as a blue (half feta, half chopped walnuts), purple (half apple, half blueberry) and green.
