Ingredients

  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry*
  • 1 (16 ounce) container sour cream
  • 1 cup mayonnaise
  • 1 (1.4 ounce) packet Knorr Vegetable Recipe Mix
  • 1 (8 ounce) can sliced water chestnuts, drained and chopped
  • 3 green onions, chopped + more for garnish, if desired
  • crackers and fresh vegetables for serving

Instructions

  • It is very important to drain all of the water from the spinach. You can wrap the spinach in a few layers of paper towels or a kitchen towel and wring out the liquid. You could also press it in a potato ricer to remove the liquid. Set aside.
  • In a large bowl, add the sour cream, mayonnaise, Knorr mix, water chestnuts and green onions. Stir well to combine. Stir in the spinach until fully combined.
  • Cover dip and chill for at least 2 hours or overnight. Serve with crackers and fresh vegetables.

Notes

*You can substitute a 9 ounce bag fresh spinach leaves, cooked, squeezed dry and chopped for the frozen spinach.
Make it ahead of time: I recommend making this spinach dip recipe the night before serving. This allows time for all of the flavors to really come together and become extra delicious! Once you’ve made it, simply cover it and refrigerate it until you’re ready to serve it the next day. Before serving, give it a good stir.
How to store spinach dip: If you have any leftover dip, simply add it to a small airtight container and place it in the refrigerator. Spinach dip will stay good in the fridge for up to 3-4 days.
