Ingredients

FOR THE VINAIGRETTE:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

FOR THE SALAD:

  • 1 large head romaine lettuce, chopped
  • 1/2 red onion, thinly sliced
  • 1 1/2 cups cherry or grape tomatoes, halved
  • 1/3 cup pitted black olives, halved
  • 1/3 cup sliced or whole pepperoncini peppers
  • 2 cups croutons, more or less depending on preference
  • 1/2 cup grated Parmesan cheese, plus extra for serving

Instructions

FOR THE VINAIGRETTE:

  • Add all ingredients to a jar with a lid. I use a mason jar. Shake vigorously to combine all ingredients. Use immediately or store in the fridge for about a week.

FOR THE SALAD:

  • Add all salad ingredients to a large salad serving bowl. Toss to combine, drizzle with the vinaigrette and toss again to coat the salad. Serve with more Parmesan cheese sprinkled over the top.

Notes

This crisp green salad will pair with any pasta dish. Also try it with chicken!
