Ingredients
For the vinaigrette:
1/4cupolive oil
2tablespoonsred wine vinegar
1teaspoonDijon mustard
1/2teaspoongarlic powder
1/2teaspoondried oregano
1/2teaspoonsalt
1/4teaspoonpepper
For the salad:
1large head romaine lettucechopped
1/2red onionthinly sliced
1 1/2cupscherry or grape tomatoeshalved
1/3cuppitted black oliveshalved
1/3cupsliced or whole pepperoncini peppers
2cupscroutons more or less depending on preference
1/2cupgrated Parmesan cheeseplus extra for serving
Instructions
For the vinaigrette:
Add all ingredients to a jar with a lid. I use a mason jar. Shake vigorously to combine all ingredients. Use immediately or store in the fridge for about a week.
For the salad:
Add all salad ingredients to a large salad serving bowl. Toss to combine, drizzle with the vinaigrette and toss again to coat the salad. Serve with more Parmesan cheese sprinkled over the top.

*Nutritional information includes all of the vinaigrette.Storing Italian Salad - Like most salad recipes, once the salad and dressing have combined, it is hard to store for any length of time. The dressing will quickly start to make the salad and croutons soggy. Only dress what you plan on eating and store the salad and dressing separately for longer storage. Both will keep in the fridge for 2-3 days.
