Peppermint Crunch Christmas Cookies

Ingredients

  • 1 cup butter, softened 2 sticks
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon peppermint extract
  • 2-1/4 cups flour all-purpose will work best
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 10 oz. bag peppermint crunch baking chips; such as Andes brand

Instructions

  • Preheat oven to 350 degrees F. and prepare a baking sheet with parchment paper or cooking spray.
  • Beat butter and sugars in large bowl with mixer until light and fluffy.
  • Blend in eggs, vanilla and peppermint extract. Add flour, baking soda and salt; mix well. Stir in peppermint crunch baking chips.
  • Drop rounded tablespoonfuls of dough, 1-1/2 inches apart, onto baking sheet. *Cookies will spread.
  • Bake 9 to 11 min. or until lightly browned. Cool on baking sheets 3 min.; remove to wire racks. Cool completely.

Notes

Cookies freeze well, so you can do your holiday baking ahead of time. Let cool completely and store in an airtight container or zipper top bag.
