Healthier Apple Crumble

This gluten-free, vegan, healthier apple crumble is made with such nutritious ingredients you can eat it for breakfast, but it’s also scrumptious enough to serve for dessert.

Ingredients

For the apple filling:

  • 5 apples about 2 pounds, thinly sliced (peel, if desired, but I don't)
  • 2 tablespoons maple syrup honey would work, but is not vegan
  • 1 tablespoon lemon juice 1/2 lemon juiced

For the crumble topping:

  • 1 cup rolled oats use gluten free, if desired
  • 1/2 cup almond meal/flour
  • 1/4 cup coconut sugar or brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup coconut oil or butter, melted

Instructions

  • Preheat oven to 350 degrees F and spray a 9-inch pie plate with a natural cooking spray.
  • Combine all filling ingredients in a medium bowl and transfer to pie plate.
  • Combine all crumble topping ingredients in a medium bowl.
  • Sprinkle crumble mixture over the top of apples.
  • Bake for about 40 minutes and until apples are of desired softness. If after 40 minutes, crumble topping is browning, but apples are not soft enough- place tin foil over the crumble and bake another 5-10 minutes.
  • Allow to cool slightly before spooning out.
  • Serve warm and with vanilla ice cream or coconut cream, if desired.

Notes

Best served hot, but leftovers are still great! Try topping with ice cream or whipped cream.
