Banana Whipped Eggy Oatmeal- protein-packed oats with a lovely flavor and texture!

Ingredients

  • 1 cup water milk can be used, if desired
  • 1/2 cup rolled oats gluten-free, as needed
  • 1 banana 1/2 mashed and 1/2 diced or sliced
  • 1 teaspoon cinnamon
  • 2 packets Stevia or desired sweetener, as needed
  • 1 egg organic and cage-free, if possible
  • 1 teaspoon pure vanilla extract
  • Optional toppings: chopped nuts nut or seed butter, fresh or dried fruit, a splash of almond milk

Instructions

  • Boil water in a medium pot and add oats. Reduce temperature to simmer oats for 5 minutes.
  • Meanwhile, prepare all other oatmeal ingredients.
  • After 5 minutes of cooking, add mashed banana, cinnamon, sweetener and egg. Whip with fork continuously for about 1 minute and then remove oats from heat, add vanilla and pour in bowl. It is important to whip egg continuously to keep it from scrambling.
  • Garnish oats with your favorite toppings. In the pictures, you can see that I topped my oats with chopped pecans, craisins and diced banana.
  • Enjoy!

Notes

Make sure your banana is fairly ripe so that the mashed part "whips" in well.
