1cupdiced tomatoesseeds removed (about 2 small tomatoes)
1/2cupdiced red onion
1/4cupchopped cilantro
1minced jalapenoseeds and ribs removed
1avocadopeeled, pitted and chopped
1tablespoonlime juiceabout 1 lime
2teaspoonshoney or agave
salt and pepper to taste
For the cinnamon pita chips:
3-4pitas or tortillas
coconut oil sprayor other cooking spray a couple of tablespoons of coconut oil works too
1tablespoongranulated sugar or coconut sugar*
1 1/2teaspoonsground cinnamon*
Instructions
For the salsa:
Combine all ingredients and serve chilled.
For the cinnamon pita chips:
Slice pitas into desired shape and size. A pizza slicer works well for cutting. Lay pita slices on a baking sheet, spray with coconut oil spray (or brush coconut oil on) and sprinkle desired amount of sugar and cinnamon on slices.
Bake at 400 degrees F. for about 5-10 minutes. Check frequently after about 5 minutes because these burn easily.
Notes
Measurements, particularly for the pita chips, are a rough guide. Feel free to use as much sugar or as little as you desire. Also, feel free to experiment with strawberry salsa ingredients. Add in favorites- mango sure would be tasty!**in place of the cinnamon and sugar and mixed cinnamon/sugar grinder would work well
