Strawberry Salsa and Cinnamon Pita Chips

Fresh and fruity! You'll want to eat this healthy appetizer all summer long and bring it to a gathering and be the star of the show. ;)

Ingredients

For the salsa:

  • 1 cup diced strawberries
  • 1 cup diced tomatoes seeds removed (about 2 small tomatoes)
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 minced jalapeno seeds and ribs removed
  • 1 avocado peeled, pitted and chopped
  • 1 tablespoon lime juice about 1 lime
  • 2 teaspoons honey or agave
  • salt and pepper to taste

For the cinnamon pita chips:

  • 3-4 pitas or tortillas
  • coconut oil spray or other cooking spray a couple of tablespoons of coconut oil works too
  • 1 tablespoon granulated sugar or coconut sugar*
  • 1 1/2 teaspoons ground cinnamon*

Instructions

For the salsa:

  • Combine all ingredients and serve chilled.

For the cinnamon pita chips:

  • Slice pitas into desired shape and size. A pizza slicer works well for cutting. Lay pita slices on a baking sheet, spray with coconut oil spray (or brush coconut oil on) and sprinkle desired amount of sugar and cinnamon on slices.
  • Bake at 400 degrees F. for about 5-10 minutes. Check frequently after about 5 minutes because these burn easily.

Notes

Measurements, particularly for the pita chips, are a rough guide. Feel free to use as much sugar or as little as you desire. Also, feel free to experiment with strawberry salsa ingredients. Add in favorites- mango sure would be tasty!
**in place of the cinnamon and sugar and mixed cinnamon/sugar grinder would work well
