Ingredients

lb.
lean ground turkey or chicken
1/2
onion
finely chopped
1
red or green bell pepper
finely chopped
2
cloves
garlic
minced
1
can
black beans, drained and rinsed
15 oz.

can
diced tomatoes, with liquid
14.5 oz.

cup
frozen corn
or drained canned corn
1
cup
water
1
cup
quinoa
dried
1
tablespoon
garlic salt
1
tablespoon
chili powder
1
teaspoon
cumin
salt and pepper to taste
Instructions
Spray a large skillet with cooking spray, and heat over medium-high heat. Add turkey, onion and bell pepper.
Cook until meat is mostly cooked through. Stir in garlic, and cook two minutes longer.
Add beans, tomatoes, corn and water; bring to a boil. Stir in quinoa and seasonings; reduce heat to medium-low and cover.
Simmer for 20-25 minutes and until most of the liquid is absorbed.
Notes
Serve with desired toppings in a bowl or try serving in a tortilla, taco-style, or with lettuce for a taco salad.
