Ingredients

  • 1 lb. lean ground turkey or chicken
  • 1/2 onion finely chopped
  • 1 red or green bell pepper finely chopped
  • 2 cloves garlic minced
  • 1 can black beans, drained and rinsed 15 oz.
  • 1 can diced tomatoes, with liquid 14.5 oz.
  • 1 cup frozen corn or drained canned corn
  • 1 cup water
  • 1 cup quinoa dried
  • 1 tablespoon garlic salt
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • salt and pepper to taste

Instructions

  • Spray a large skillet with cooking spray, and heat over medium-high heat. Add turkey, onion and bell pepper.
  • Cook until meat is mostly cooked through. Stir in garlic, and cook two minutes longer.
  • Add beans, tomatoes, corn and water; bring to a boil. Stir in quinoa and seasonings; reduce heat to medium-low and cover.
  • Simmer for 20-25 minutes and until most of the liquid is absorbed.

Notes

Serve with desired toppings in a bowl or try serving in a tortilla, taco-style, or with lettuce for a taco salad.
